First Beachbody launched P90X, and people got AMAZING results.  But that program was at least an hour long each day.  So, Beachbody created the 21 Day Fix, which consisted of 30 minute workouts every day. Then, T25 with 25 minute workouts

On the 21st of March, we will start our preseason, which consists of 1 week of goal setting, pictures, measurements, meal planning and education on the nutritional plan, and then the following week (28 March) is our official day 1 of workouts.

Easy Valentine's Recipes to Make at Home!

Here are some recipes I put together to help make your Valentine's weekend a little easier.  

If it's about 20 degrees, like it is here for us in Maryland, then maybe you're staying in this weekend.  Some of our most fun Valentine's days were spent here at home with our family. 

If you still want to celebrate with your loved ones, and you don't want to spend a ton at a restaurant, or maybe you waited too long and reservations are sold out, these recipes are easy to make and don't require a lot of ingredients.   

I'll be celebrating with our toddler and 5 year old, and I know for sure they're going to LOVE the flank steak and chocolate chip truffles.  We're going to add a mixed greens salad with some vinaigrette, and mommy is going to have a glass or two of wine. 

I hope you have a wonderful day celebrating!  Whether it's with your husband, wife, kids, or friends, the day is all about acknowledging that we're surrounded my LOVE. Celebrate and then carry on with it all 364 other days of the year.

Chocolate Covered Strawberry Banana Kabobs

Recipe adapted from: Cooking With Ruthie.

Prep time: 10 minutes
Cook time: 2 minutes
Total time: 12 minutes


  • 1 cup dark chocolate chips or 1 scoop of Chocolate Shakeology
  • 4-5 fresh whole strawberries
  • 2 bananas
  • 4 skewers
  • 1 sheet parchment paper
  • 1 tbsp coconut oil (if using Shakeology)

  1. Cut strawberries into 3-4 pieces.
  2. Cut bananas into 1 inch chuinks.
  3. Alternate strawberries and bananas on skewers.
  4. Place skewers on parchment paper.
  5. Place chocolate chips in a microwave safe bowl, microwave 30 seconds, stir, microwave 15 seconds.
  6. If using Shakeology, scoop 1 helping into a microwave safe bowl. Add tbsp coconut oil. Microwave on high for 30 seconds or until oil is melted. 
  7. Stir until smooth, microwave 15 additional seconds if needed.
  8. Drizzle melted chocolate over each skewer.
  9. Place in freezer or fridge to let chocolate cool and firm.
  10. Enjoy!

Raspberry Banana Ice Cream

Super-simple recipe that has only 3 ingredients and takes less than 10 minutes to make! Cashews are the secret to making it so creamy and delicious.  Give it a try and let me know what you think!

Yield: 2 servings
  • 2 medium bananas, cut into chunks
  • ½ cup whole raw cashews
  • 1 cup hot water
  • 3 cups fresh (or unsweetened frozen) raspberries
  • Water (optional)

  1. Place banana in plastic bag; freeze for 4 hours, or until completely frozen.
  2. Place cashews in a medium bowl. Cover with water. Let stand for 30 minutes; drain.
  3. Place drained cashews, frozen banana, and raspberries in blender; cover. Blend until smooth. Add water, 2 Tbsp. at a time, if needed for consistency.
  4. Pour into a freezer-safe container; freeze until set.
  5. Enjoy!

Healthy Shrimp Scampi

Who doesn't love a good Shrimp Scampi?  I know I do.  Great source of protein and it feels like a cheat meal.  This is a great healthy shrimp scampi recipe that would be great for a special night at home like Valentine's day, a birthday or anniversary dinner.

Total Time: 22 min.
Prep Time: 10 min.
Cooking Time: 12 min.
Yield: 2 servings
  • 3 oz dry whole wheat pasta
  • 2 Tbsp. olive oil, divided use
  • 8 oz medium shrimp, peeled, deveined
  • 1 clove garlic, crushed
  • 1 Tbsp. yellow bell pepper, finely chopped
  • 1 Tbsp. red bell pepper, finely chopped
  • 2 Tbsp. fresh lemon juice
  • ¼ cup low-sodium, organic vegetable broth
  • 2 Tbsp. white wine
  • Ground black pepper (to taste; optional)
  • Crushed red pepper (to taste; optional)
  • 3 fresh parsley sprigs, finely chopped
  • 2 fresh basil leaves, finely chopped

  1. Bring large pot of water to boil for pasta.
  2. Cook pasta according to package directions; drain. Set aside.
  3. While pasta is cooking, heat 1 Tbsp. oil in large nonstick skillet over medium-high heat.
  4. Add shrimp and garlic; cook, stirring frequently, for 2 to 3 minutes, or until shrimp is opaque and firm. Remove shrimp from pan. Set aside.
  5. Heat remaining 1 Tbsp. oil over medium-high heat. Add bell peppers; cook, stirring frequently, for 3 to 4 minutes or until soft.
  6. Add lemon juice, broth, wine, black pepper, and red pepper; cook, stirring frequently, for 1 to 2 minutes.
  7. Add shrimp, parsley, and basil; cook until heated through.
  8. Divide pasta between 2 plates; top evenly with shrimp mixture.

Roast Chicken Quarters with Potatoes and Tomatoes

What I love about this recipe, is that you can make it and feel like a chef!  I'll be the first to admit I can't cook worth a darn.  I don't particularly enjoy cooking either.  I do it because I want our family to eat healthy, but I'm not one of those women who slaves over the stove or scours the internet for hours in order to find and prepare a masterpiece.  
Total Time: 1 hr. 15 min.
Prep Time: 20 min.
Cooking Time: 55 min.
Yield: 4 servings
  • Nonstick cooking spray
  • 4 (6-oz.) raw chicken leg quarters
  • ¼ tsp. sea salt
  • ½ tsp. ground black pepper
  • 2 Tbsp. fresh lime juice
  • ¼ cup low-sodium organic chicken broth
  • 1 medium lime, sliced
  • 6 fresh rosemary sprigs, leaves removed and chopped, stems discarded (reserve 2 whole sprigs)
  • 4 medium Yukon gold potatoes, cut in half lengthwise
  • 15 cherry tomatoes, cut in half
  • 5 kumquats, cut in half (or 1 lemon, sliced)
  • 6 fresh parsley sprigs, chopped

  1. Preheat oven to 450° F.
  2. Place chicken in large oven-proof roasting pan lightly coated with spray.
  3. Season with salt and pepper.
  4. Drizzle with lime juice and broth; top with lime slices and chopped rosemary.
  5. Bake for 15 minutes.
  6. Add potatoes, tomatoes, kumquats (or lemons), parsley, and rosemary sprigs; bake for 30 to 40 minutes, or until chicken is no longer pink in the thickest part, juices run clear, and vegetables are tender.
  7. Remove skin before serving.
  8. Enjoy!

Ginger Soy Flank Steak

Total Time: 1 hr. 21 min.
Prep Time: 5 min.
Cooking Time: 16 min.
Yield: 6 servings
  • 2-inch slice fresh ginger, peeled, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 Tbsp. crushed red pepper
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. raw honey
  • ¼ cup reduced-sodium soy sauce
  • 1 tsp. sesame seed oil
  • 1½ lbs. flank steak (or tenderized round steak)

  1. Combine ginger, garlic, red pepper, lime juice, honey, soy sauce, and oil in a small bowl; whisk to blend.
  2. Place steak in a shallow dish. Pour ginger mixture over steak; marinate, covered, turning once, for 1 hour in the refrigerator.
  3. Preheat grill or broiler on high.
  4. Grill or broil steak for 5 to 8 minutes on each side, or until the internal temperature reaches desired temperature on your meat thermometer (rare is 120° F., medium rare is 125° F., medium is 130° F.). Remove from heat; let steak rest, covered with aluminum foil, for 5 to 10 minutes before slicing.
  5. Slice steak thinly against the grain.
